Vineyards: Grapes with a high sugar content are selected (high degree baume) and specifically. After harvest, the grapes are spread on the ground under the sun so that through evaporation the sugar density is increased and the grapes reach at least 22 baume. Consequently, the grapes are taken to the winery where they undergo crushing, pressing and juice extraction. The fermentation takes place in stainless steal reservoir and lasts until it ceases on its own accord, due to the fact that it had already began with high sugar content. The maturity of Commandaria is carried out in oak barrels for a period of time minimum three years. Characteristic bouquet is formed in three technological stages: During the drying process, during the fermentation which proceeds very slowly because of the high sugar content, and during ageing which lasts more than two years.

Color: Brilliant red- brown
Smell: strong characteristic bouquet, including aroma of raisins, figs, honey, carob, oak
Taste: sweet and pleasant. Well balanced
